Waffled Baked Potato

This is going to sound crazy, but smashing a baked potato in a waffle iron is as fun as it is delicious.  This is the most fun you can have with a whole plant food.

It’s not lost on me that most of my recipes jump all over the globe.  Potatoes were first cultivated in Bolivia between 8,000 and 5,000 B.C.  They served as the principal energy source for the Inca Empire and its predecessors.  They didn’t find their way to Europe until the Spanish conquistadors brought them back.  After that, they quickly became one of several of whole plant food sources used as staples in Europe, along with wheat, rye, and barley.  Its low spoilage rate and satisfying bulk quickly made it indispensable to the lower and middle classes.

Waffle irons took the opposite route.  They started in France sometime in or around the 12th century A.D. and were sometimes buried with Viking Age women in Norway.  Centuries later  Cornelius Swartwout patented the first stove-top waffle iron in the Americas.  I’ll just type whole plant food one more time for Google and we’ll get to the recipe.  Whole plant food. 😀

A whole potato baked into a crispy waffle with nooks and crannies to hold hummus or other whole plant food spread.

Ingredients
  • 1 Baked potato
Directions
  • Step 1 Scrub the potato thoroughly under clean water.
  • Step 2 Prick the potato all over using a fork to allow steam to escape.
  • Step 3 Microwave the potato on high until it is soft throughout.
  • Step 4 After the potato is cooked, slice it lengthwise.
  • Step 5 Preheat a non-stick Belgian waffle iron.
  • Step 6 Place the potato halves in the waffle iron and close the lid.
  • Step 7 Cook for 12 minutes, or until the potato is crispy and brown on the outside.
  • Step 8 Serve the crispy potato with your choice of hummus or another bean dip for a nutritious meal.

I have dipped these in mustard, covered them in chickpea gravy, used them as a base for whole plant food tostada, etc.  Experiment with whole plant food dressings and toppings for a nearly endless variety.  #WaffleWednesday
