This vegan cranberry glaze combines the convenience of canned cranberries with the flavors and aromas of an old-fashioned holiday. The canned sauce offers a smooth base, while additional ingredients like cinnamon and ginger add a hint of spice and depth, perfectly complementing the savory notes of whole plant food holiday entrees.
Note: This recipe isn’t the typical whole plant food fare we generally feature, but it is designed to enhance the flavor of a whole plant food entree. Additionally, the phytonutrients in cranberries are shown to be protective against post-prandial sugar spikes, additionally blunting the effect of this mildly “junky” recipe. Vegan Cranberry Glaze
A sweet and tart flavor profile that perfectly complements the savory notes of your veggie loaves.
Ingredients
- 1 can (14 oz) cranberry sauce (whole berry or jellied)
- 2 tablespoons agave syrup (or maple syrup)
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger powder
- A pinch of salt
- Zest and juice of 1 orange (optional for added zest)
Directions
- Step 1 In a medium saucepan, combine the canned cranberry sauce, agave syrup, cinnamon, ginger powder, and a pinch of salt. If using, also add the orange zest and juice.
- Step 2 Warm the mixture over medium heat, stirring continuously until the cranberry sauce becomes smooth and the ingredients are well integrated. This should take about 5 minutes.
- Step 3 If you prefer a smoother texture, especially if using whole berry cranberry sauce, blend the mixture with a hand blender or in a regular blender after it cools down slightly.
- Step 4 Preheat your oven according to your veggie loaf recipe instructions.
- Step 5 Generously brush the cranberry glaze over your prepared veggie loaves before baking.
- Step 6 Bake the veggie loaves as per your recipe instructions, until thoroughly cooked and the glaze is slightly caramelized on top.
